The cleaned bone at the top of the rib, where the meat has been "frenched" away, gives this cut that extra special eye appeal that takes everything to the next level. This piece should be ordered by the rib, and each rib feeds approx. 2 people. The "Boned & Tied" preparation makes this piece super easy to handle. Once you take it out of the oven, all you have to do is cut a string and the bones will fall away, leaving with you a completely boneless piece that you can carve to your desired thickness.
