Flanken Cut short ribs are cut across the bone. Each piece from the Rib Short Rib has three section of the bone with a generous portion of meat around them. The cooked ribs should fall right off the bone in tender pieces when done right. This is a popular option for Asian-style short ribs. Our standard cut here is 1/2" thick but we can do anything you want from a quarter of an inch to 3" thick. Just specify your request in the notes when you place your order.
